Crockpot Duets: Two Crockpots Making Beautiful Meals Together (For St. Patty's Day)

My mother-in-law's favorite character was Kermit the Frog.

Two Slowcookers for St. Patty's Day: Slowcooker
Shepherd's Pie and Slowcooker Irish Bread


Slowcooker #1 - Slowcooker Shepherd's Pie

Ingredients:

* 3 lbs ground round turkey
* 1 onion chopped
* 4 cups vegetables - chopped carrots, corn, peas
* 3 lbs potatoes, chopped (5 big ones)
* 1/2 olive oil
* 2 cups beef broth
* 3 Tablespoons Worcestershire sauce
* 1 teaspoon Salt, 2 teaspoons pepper, 1 teaspoon garlic powder

Preparation:

Spray your slowcooker with non-stick spray.

In separate pan, sauté onions and ground turkey in olive oil over medium heat (15 mins).

In separate pot with water, boil potatoes until tender. Mash potatoes in bowl, season to taste.

Place turkey and onions in slowcooker. Add vegetables. Add salt, pepper, garlic powder, and worcestershire sauce. Add beef broth. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks.

Cover. Cook in slowcooker on high for three hours or low for five hours. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks. Cook twenty minutes longer.

Optional to add two cups shredded sharp cheddar cheese, cover, and cook 10 minutes longer.

Sprinkle with a little paprika.

Serves eight. Celebrate being green.



Slowcooker #2 - Slowcooker Irish Soda Bread

Amply double spray a metal bread pan with non-stick spray and lightly flour it.


Ingredients
:

3 cups flour 

1 Tablespoon baking powder 

1/2 cup sugar 

1 teaspoon salt 

1 teaspoon baking soda 

2 egg whites, lightly beaten 

2 cups buttermilk 

1/4 cup olive oil
1/2 cup or 1 cup raisins, optional


Directions
Preheat oven to 325 degrees and grease a 9×5 inch loaf pan.

Combine flour, baking powder, sugar, salt and baking soda. Blend egg whites and buttermilk together. Add to the flour mixture. Mix, but don't overmix. Stir in olive oil. Pour into prepared pan. Put metal pan into slowcooker.

Bake for 90 minutes to 2 hours on low in the crockpot, or until a toothpick inserted comes out clean.
